Gourmet Golumpki

An old Kulesza family favorite, golumpkis! I saw a new golumpki recipe on a blog we have been using for recipes (I also like to listen to their podcasts).  It included a slight adjustment to our old family recipe.  In lieu of rice you use some greens like spinach and fruit such as apples at least that is the first recipe we followed and that I linked above.  We didn’t follow it to a tee as we used some of my years of golumpki cooking experience to augment the recipe and cooking directions.  I didn’t have to watch the video to learn the rolling technique as I learned it from mom (a master roller) one fine Easter, who knows what year.  All I can say is it all about the last little tuck of the cabbage leaf wrapping around the base.  Tonight we are making our second round and we changed up the recipe using turkey sausage for the meat - we are thinking this will bring some mighty fine flavor.  And we used arugula for our greens and pear for our fruit.  They are on the stove cooking right now.  We didn’t use the Kulesza family secret, brown sugar in the sauce although we did add bacon to the rolls which we are pretty excited about.  They won’t get to stew for as long as maybe sometimes they do on Easter because we just can’t wait that long.  Although last time I did find the left overs even better as they soaked up more juices in the fridge overnight.  Can’t wait to eat them up!
